Only the suckling pigs of race Iberian are apt for the acorn-fed under the brand Encina Don Alberto.
The factory staff chooses the pastures with better acorns harvests for the ‘montanera’. During the fattening is done a monitoring of the correct process of the pig’s feeding with acorns and in freedom, which is corroborated by the corresponding certifiers organisms.
All our pieces are elaborated following the traditional way of Jabugo, as is explained in the “Elaboration” section and are cured in our dryers the necessary time according to their weight. Only when they reach their optimal point of curation are brought out to the market. Previously the last quality control takes place: “La cala”.
La Cala is a traditional method that we keep on practicing in Encina Don Alberto to detect possible defects of ham. It consists of penetrating the piece in different parts with a bone from a cow or horse tibia so that is impregnated of the delicate aromas of the meat. If ham is perfect, from both bones should be exhaled identical perfume.
All our products are sent through a transport company specialized in foodstuffs. The sending includes an insurance of the merchandise that guarantee the optimal conditions delivery.

Is the packaging with all the orders are sent by default, unless the client selects another option, and it doesn’t mean an increase in the order amount. The hams and shoulders are presented with rope, label, seals and individually covered, and the inlays labelled and vacuum-packaged. The sending is realized in a serigraphy resistant cardboard case. Which could contain 1 to 4 pieces as maximum, depending on the weight of them and the number of products which compound the order. This system is the most respectful with the environment because tries to optimize the volume of the sending boxes.
This option is available for all the destiny: national and European Union.
This packaging consist on a special gift presentation. For that is used a box with an elegant design. Each ham or shoulder piece, besides its labelled, seals and textile cover, is packed in a gift box in an individual way and may be accompanied of some of our inlays which the client selects.
You may select this special packaging system during the automatized buying process only for sendings to the peninsula. This option will have an extra cost of the 3% over the total cost of the order before adding the transport costs and without count for this calculation the products of the category “Gift Lots” if you have added anyone to your order, as they have this presentation.
If you wish the gift packaging for a different destiny than the peninsula, you should realize the order through email of telephone to estimate the cost of this option for your exact destination.

Es el embalaje con el que se envían todos los pedidos por defecto, salvo que el cliente seleccione otra opción, y no supone incremento del importe del pedido. Los jamones y paletas se presentan con cuerda, etiqueta, precintos y funda textil individual, y los embutidos etiquetados y envasados en bolsa de vacío. El envío se realiza en una caja de cartón resistente Serigrafiada de 1 a 4 piezas máximo, en función del peso de las mismas y del número de productos que compongan el pedido. Este sistema es el más respetuoso con el medio ambiente ya que persigue optimizar el volumen de las cajas de envío.
Esta opción está disponible para todos los destinos; nacional y Unión Europea.
Este embalaje consiste en una presentación especial para regalo. Para ello se utilizará una caja de regalo con elegante diseño. Cada pieza de jamón o paleta, además de su etiquetado, precintos y funda textil, se envasará en una caja de regalo de forma individual y podrá ir acompañado de alguno de nuestros embutidos que seleccione el cliente.
Este sistema de embalaje especial puede seleccionarlo durante el proceso automatizado de la compra para envíos a la península, y tendrá un coste adicional de un 3 % calculado sobre el importe total del pedido antes de los gastos de transporte y sin contar para el cálculo los productos de la categoría “Lotes regalo” si ha añadido alguno a su pedido, ya que éstos ya cuentan con esta presentación. If you have consumed partially the ham and want to return it we will pay the proportional amount to the weight of the ham that we receive.
Namely if you buy an 8 kilos ham, and on having received the returned piece, it weighs 7 kilos we will pay the amount corresponding to 7 kilos of ham. The optimal curation period of hams and shoulders depends on many factors. It will be determined essentially by the weight of the piece, the feeding of the pig from which comes; acorn-fed hams need more time than the fodder-fed ones. And also the location and orientation of the dryer, and especially the climatology of the zone.
All these factors take part in the curation. Therefore the optimal time of curation will be always determined by the experience of the masters of ham, who knowing all the previous factors and after doing ‘la cala’ will settle down the suitable moment for the consumption.
When receiving the product you should take it off the packing and maintain it in a fresh and dry place. Its consumption should be in thin slices and at room temperature. You may increase your information about the consumption and maintaining in our section “Consumption”.
